Sourcing

Cardamom is grown in both India and Guatemala. The plant thrives in both locations and climates. Indian cardamom is primarily used by local spice manufacturers, while the harvested crop from Guatemala is mostly exported.

Cardamom belongs to the ginger family. It prefers shaded areas and a plant typically lives for seven years. It usually starts bearing fruit two to three years after planting, with each pod containing 10–20 cardamom seeds. Harvesting typically occurs from September to February. The majority of harvested cardamom is sold on the spice market. The essential oil is extracted from the cardamom seeds located within the pods. The outer wall of the pods is green, thin, and papery. Inside are the seeds, which are small and black. They are dried for about 36 hours before being sold – either for spice production or distillation. After drying, cardamom pods weigh only one-fifth of their fresh weight. The essential oil is then extracted from the seeds through steam distillation for several hours.
